Blueberry waffles

For Labour Day I decided there was no better way to relax than to munch on a blueberry waffle breakfast! So I hunted down this recipe from About.com. Unfortunately I had to change it around a little after I realised halfway through it said 'separate the eggs'. Whoops! I had already beaten them together...

The result was actually really, really good! The batter was thick, not fluffy like it probably should have been. But the blueberries cooked perfectly and the recipe made waaay more than 6 waffles (see Waffle tower below).

Basically making this recipe was really easy to make, so easy in fact that even in my half asleep state and egg mishap aside it still turned out delicious!

Blueberry Waffles: 

Ingredients:

  • 2 eggs, separated
  • 1 1/2 cups milk
  • 1/2 cup melted butter
  • 2 cups sifted all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup fresh or frozen blueberries, rinsed

 Preparation:

In a small mixing bowl, beat egg whites until stiff; set aside. Beat egg yolks; add milk and melted butter. Sift dry ingredients together; add egg yolk mixture and mix until smooth and fold in blueberries. Gently fold in beaten egg whites. Bake in a hot waffle iron.

Makes about 6 blueberry waffles.
(This is what I actually did)
Best eggs together, add milk, melted butter and whisk. Stir in remaining ingredients, beat until smooth. Pour into a hot waffle iron about 2 large tablespoons, wait 2-3 mins until cooked. Serve with maple syrup:-)

Makes more like 11 waffles!
