Awesome yummy cake by Alex

A few weekends ago our lovely friends Alex and Dan come for dinner. The person who's house it is usually makes the dinner and the other person brings  dessert. This time it was it our place so Alex brought dessert and oh my! It was one of the most delicious cakes EVER! I wanted to share it with you blogger friends, but I kept forgetting to post it last week, anyway here it is.

Date and Apple Cake with Coconut Topping
(makes a 20cm cake)

Ingredients:

2C peeled and diced apple
1C chopped stoneless dried dates
3/4C boiling water
1tsp baking soda
1C sugar
1 egg (room temp)
1tsp vanilla essence
11/2C flour (you can replace with gluten free baking mix)
Coconut topping

Preheat to 150C. lightly grease 20cm cake tin ad line base.

Place apple  dates into bowl and sprinkle with baking soda. Add water and cool.

Place butter and sugar into a bowl and beat until smooth, pale and creamy.

Add egg and vanilla essence and beat until combined. Add flour and fold in followed by apple and date mix with any liquid.

place into cake in and smooth surface. Bake for 55 to 60 min and remove from oven. As quickly as possible place coconut topping on cake. Place bake into oven adn bake for an additional 10 mins. Place on cooling rack and when cool remove from tin. Store in airtight container for up to 4 days.

Coconut topping:
Ingredients:
60g butter (diced)
1tbsp milk
150g brown sugar
1C desiccated coconut

Place butter, milk, sugar and coconut into a saucepan, set over a low heat and stir till butter and sugar have melted and ingredients are combined.

We had some left and had it the next day! What an awesome morning tea snack it makes, I felt like even the coffee tasted better because of its deliciousness  :)
